Ingredients

  • 4 medium Russet potatoes
  • 1.5 cups Cooked ham
  • 1 medium Yellow onion
  • 1 medium Bell pepper (any color)
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Smoked paprika
  • 2 tablespoons Chopped parsley (optional)

Directions

Step 1

Peel and dice the russet potatoes into small 1/2-inch cubes. Rinse them under cold water to remove excess starch and pat them dry with a kitchen towel.

Step 2

Dice the cooked ham, onion, and bell pepper into small, bite-sized pieces. Mince the garlic cloves.

Step 3

Heat a large skillet over medium heat and add the olive oil and butter. Once the butter is melted and sizzling, add the diced potatoes in a single layer.

Step 4

Cook the potatoes for 8-10 minutes, stirring occasionally, until they are golden and crispy on the outside and tender on the inside.

Step 5

Push the potatoes to one side of the skillet and add the diced onion and bell pepper to the empty side. Sauté the vegetables for 3-4 minutes until softened and fragrant, then stir them into the potatoes.

Step 6

Add the diced ham and minced garlic to the skillet. Stir everything together and cook for another 3-4 minutes until the ham is heated through.

Step 7

Sprinkle the hash with salt, black pepper, and smoked paprika. Stir well to distribute the seasonings evenly.

Step 8

Taste and adjust the seasonings if needed. If desired, garnish with freshly chopped parsley before serving.

Step 9

Serve hot and enjoy your Potato Ham Hash as a standalone dish or paired with fried eggs for an extra hearty meal.
