Ingredients

  • 2 medium Russet potatoes
  • 4 large Garlic cloves
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Parsley (fresh, chopped)
  • 2 tablespoons Water (or vegetable stock)

Directions

Step 1

Peel the potatoes and cut them into large chunks for quicker cooking.

Step 2

Bring a medium pot of water to a boil, add a pinch of salt, and cook the potatoes for 15-20 minutes or until tender when pierced with a fork.

While the potatoes are cooking, roast the garlic. To do this, heat 1 tablespoon of olive oil in a small pan over low heat. Add the garlic cloves (unpeeled) and roast for about 10 minutes, flipping occasionally, until the cloves are soft and slightly golden.
