Ingredients

  • 3 medium Russet potatoes
  • 1 small Yellow onion
  • 4 tablespoons All-purpose flour
  • 2 large Eggs
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley
  • 0.25 cup Cooking oil (vegetable or canola)

Directions

Step 1

Peel the russet potatoes and grate them using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much excess moisture as possible.

Step 2

Finely chop the yellow onion, or grate it using the box grater. Add the onion to the grated potatoes in a large mixing bowl.

Step 3

Stir in the all-purpose flour, eggs, garlic powder, paprika, salt, black pepper, and chopped parsley. Mix well until all the ingredients are evenly combined.

Step 4

Heat the cooking oil in a large skillet over medium heat. Test the oil by dropping a small amount of the potato mixture into it—if it sizzles, it's ready.

Using a tablespoon, scoop a portion of the potato mixture into the skillet. Flatten it slightly with the back of the spoon to form a patty. Repeat until the skillet is filled, leaving space between each fritter.
