Ingredients

  • 3 medium Yukon Gold potatoes
  • 8 large Eggs
  • 0.25 cup Milk
  • 0.75 cup Gruyère cheese
  • 1 medium Onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Paprika

Directions

Step 1

Peel and thinly slice the Yukon Gold potatoes into 1/4-inch rounds. Dice the onion into small pieces.

Step 2

Heat 2 tablespoons of olive oil in a large non-stick, oven-safe skillet over medium heat. Add the potatoes and onions, cooking for 8-10 minutes until the potatoes are golden and tender. Stir occasionally to prevent sticking, then remove from heat and set aside.

Step 3

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and paprika until fully combined.

Preheat your oven to 375°F (190°C).

Stir the cooked potato and onion mixture into the egg mixture. Add the shredded Gruyère cheese and half of the chopped parsley, and gently mix to combine.
