  • 2 sprigs Fresh rosemary (optional, for topping)
  • 5 grams Flaky sea salt (for topping)
  • 20 milliliters Extra virgin olive oil (for drizzling)

Directions

Step 1

In a large mixing bowl, combine the warm water and sugar, then sprinkle in the dry yeast. Let it sit for 5-10 minutes until foamy.

Step 2

Add the mashed potatoes, 50 ml olive oil, and salt to the yeast mixture, stirring until fully combined.

Step 3

Gradually add the all-purpose flour, mixing with a wooden spoon or your hands until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-7 minutes.
