Ingredients

  • 4 pieces Medium-sized russet potatoes
  • 4 tablespoons Unsalted butter, melted
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parmesan cheese, grated (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Wash the potatoes thoroughly and pat them dry. Leave the skins on for added crispiness.

Step 3

Place each potato on a cutting board. Place two wooden chopsticks or the handles of two wooden spoons parallel to the sides of the potato to act as a guide. Slice the potato crosswise into thin, even slices about 1/8 inch apart, being careful not to cut all the way through (the chopsticks will help prevent this).

Step 4

In a small bowl, mix the melted butter, olive oil, minced garlic, thyme leaves, salt, and black pepper.

Step 5

Carefully fan out the potato slices to expose the layers. Using a pastry brush or a small spoon, brush the butter mixture generously in between the slices and over the surface of each potato.

Step 6

Place the potatoes on the prepared baking sheet and bake for 45-50 minutes, or until the edges start to turn golden and crisp.

Step 7

If using Parmesan cheese, sprinkle it generously over the potatoes during the last 10 minutes of baking to allow it to melt and brown slightly.

Step 8

Remove the potato fans from the oven and let them cool for a few minutes before serving. Garnish with extra thyme if desired and enjoy!
