Ingredients

  • 4 medium Russet potatoes
  • 6 Large eggs
  • 1 cup Mayonnaise
  • 0.5 cup Sour cream
  • 2 tablespoons Yellow mustard
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 0.5 cup Cooked and crumbled bacon
  • 0.25 cup Chopped green onion
  • 1 cup Shredded cheddar cheese
  • 1 tablespoon Olive oil
  • 2 tablespoons Parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash, peel, and cube the russet potatoes into 1-inch pieces.

Step 3

Bring a large pot of salted water to a boil. Add the potatoes and cook for 10-12 minutes, or until they are fork-tender but not mushy. Drain and set aside.

While the potatoes are cooking, boil 4 of the eggs until hard-boiled (about 10-12 minutes). Remove from heat, cool under ice water, and peel. Slice into quarters and set aside.
