Ingredients

  • 1.5 pounds Ground beef
  • 0.5 pounds Ground pork
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 0.5 cups Bread crumbs
  • 0.25 cups Milk
  • 2 Eggs
  • 1 tablespoon Worcestershire sauce
  • 0.25 cups Ketchup
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 large Potatoes, peeled and shredded
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Paprika
  • 1 tablespoon Optional: parsley, for garnish

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a standard loaf pan and set aside.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, chopped onion, minced garlic, bread crumbs, milk, eggs, Worcestershire sauce, ketchup, salt, and black pepper. Mix thoroughly until evenly combined.

Step 3

Transfer the meat mixture into the prepared loaf pan, pressing it down firmly to form an even layer.

Step 4

Using a clean kitchen towel or paper towels, pat the shredded potatoes dry to remove excess moisture.

Step 5

In a medium bowl, toss the shredded potatoes with olive oil, paprika, and a pinch of salt and pepper.

Step 6

Spread the seasoned shredded potatoes in an even layer on top of the meatloaf, pressing them gently into the surface to adhere.

Step 7

Place the loaf pan in the preheated oven and bake for approximately 75 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 8

If the shredded potatoes are not golden and crisp after 75 minutes, turn on the broiler and cook for an additional 3-5 minutes, watching closely to prevent burning.

Step 9

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 10

Optional: Garnish with chopped parsley before serving. Enjoy your Potato Crusted Meatloaf!
