Ingredients

  • 2 pounds Potatoes (Yukon Gold or Red)
  • 3 tablespoons Butter
  • 4 cloves Garlic (minced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Fresh Thyme (chopped)
  • 1 tablespoon Fresh Rosemary (chopped)
  • 1 cup Heavy Cream
  • 1.5 cups Cheddar Cheese (shredded)
  • 0.5 cup Parmesan Cheese (grated)
  • 2 tablespoons Fresh Parsley (for garnish)

Directions

Step 1

Wash and scrub the potatoes thoroughly. Peel if desired and cut into 1-inch cubes.

Spray the inside of your crock pot with non-stick cooking spray or lightly grease it with butter.

Add the diced potatoes to the crock pot.
