  • 3 medium Russet potatoes
  • 1 cup Cottage cheese
  • 2 tablespoons Butter
  • 1 small Onion

  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Chopped fresh chives (optional)

Directions

Step 1

Peel and dice the potatoes into evenly-sized chunks for even cooking.

Step 2

Place the diced potatoes in a large pot and cover with cold water. Add a pinch of salt, bring to a boil, and cook until the potatoes are fork-tender, about 15-20 minutes.
