Ingredients

  • 4 large (about 2 lbs) Russet potatoes
  • 3 cups Frozen corn kernels
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 medium Onion
  • 3 Garlic cloves
  • 3 tablespoons Butter
  • 1 teaspoon Thyme
  • 2 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons All-purpose flour
  • 0.5 cup (crumbled) Cooked bacon (optional)
  • 0.25 cup Chopped chives or green onions (optional)

Directions

Step 1

Peel and dice the potatoes into small cubes (about 1/2-inch). Finely chop the onion and mince the garlic cloves.

Step 2

In a skillet, melt the butter over medium heat. Add the chopped onions and cook until translucent, about 3-4 minutes. Add minced garlic and cook for 1 minute until fragrant.

Step 3

Sprinkle the flour over the onion and garlic mixture, stirring constantly for 1-2 minutes until the flour is fully incorporated. This will help thicken the chowder.

Step 4

Transfer the flour mixture to the crock pot. Add the diced potatoes, frozen corn, chicken broth, thyme, salt, and black pepper. Stir everything to combine.

Step 5

Set the crock pot to cook on LOW for 5-6 hours or on HIGH for 3-4 hours, until the potatoes are tender.

Step 6

Once the potatoes are tender, use a potato masher to gently mash some of the potatoes in the crock pot. This will create a naturally creamy texture while still leaving chunks of potatoes intact.

Step 7

Stir in the heavy cream and cook for an additional 15-20 minutes on LOW to heat through.

Step 8

Taste and adjust the seasoning with additional salt or pepper if needed. If desired, stir in crumbled cooked bacon for added flavor.

Step 9

Serve hot, garnished with chopped chives or green onions. Pair with crusty bread or crackers for a complete meal.
