Ingredients

  • 1 large Russet potato
  • 6 tablespoons Unsalted butter
  • 1 tablespoon Granulated sugar
  • 1.5 teaspoons Salt
  • 0.25 cup Warm water
  • 1 packet Active dry yeast
  • 2 large Eggs
  • 4.5 cups All-purpose flour
  • 0.75 cup Milk
  • 2 tablespoons Melted butter (for brushing)

Directions

Step 1

Peel and dice the potato into small chunks. Boil in a pot of water until tender, about 10-12 minutes. Drain and mash until smooth. Measure 1 cup of mashed potato and let it cool to room temperature.

Step 2

In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let it proof for 5-10 minutes, until frothy.

Step 3

In a large mixing bowl, combine the mashed potato, melted butter, sugar, and salt. Mix until well blended.

Step 4

Add the eggs and milk to the potato mixture and mix well. Stir in the proofed yeast.

Step 5

Gradually add the flour, 1 cup at a time, mixing until a soft dough forms. Knead the dough on a floured surface for about 8-10 minutes, or until smooth and elastic.
