  • 15 ounces canned chickpeas, drained and rinsed
  • 14.5 ounces canned diced tomatoes
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1.5 cups basmati rice
  • 3 cups water (for rice)
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime lime wedges (for serving)

Directions

Step 1

Heat the olive oil in a Dutch oven over medium heat.

Add the diced onion and sauté for 3–4 minutes until softened.

Stir in the minced garlic and grated ginger, and sauté for an additional 1–2 minutes until fragrant.

Add the curry powder, ground cumin, ground coriander, and chili powder (if using). Stir to toast the spices for about 1 minute.

Add the cubed potatoes to the pot and toss to coat them with the spices.
