Peel the potatoes and cut them into chunks. Boil the potatoes in salted water until soft, about 15–20 minutes.
Drain the potatoes and mash them until smooth. Let them cool slightly.
Mix the mashed potatoes with the all-purpose flour, cornstarch, salt, black pepper, and paprika until a smooth, pliable dough forms.
Cut the cheese into small rectangular blocks, about 1 inch in length and ½ inch in width.
Take a small handful of the potato dough and flatten it in your palm. Place a block of cheese in the center and gently wrap the dough around it, sealing the edges so no cheese is exposed. Shape it into a log or cylinder.
