Ingredients

  • 6 medium Russet potatoes
  • 2 cups Cheddar cheese
  • 0.5 cups Parmesan cheese
  • 1.5 cups Milk
  • 0.5 cups Heavy cream
  • 2 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 3 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Paprika
  • 2 tablespoons Fresh parsley
  • 1 as needed Olive oil spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch casserole dish with olive oil spray and set aside.

Step 2

Peel the potatoes and slice them into thin, even rounds about 1/8 inch thick. You can use a mandoline slicer for uniformity.

Step 3

Mince the garlic cloves and chop the fresh parsley finely. Set both aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Add the garlic and sauté for 1 minute until fragrant.

Whisk in the flour to create a roux. Cook for 1 to 2 minutes, stirring constantly, until golden in color.

Layer one-third of the potato slices evenly in the prepared casserole dish. Pour one-third of the cheese sauce over the potato layer, spreading evenly. Repeat this process for two more layers, finishing with cheese sauce on top.

Cover the casserole dish tightly with aluminum foil and bake for 45 minutes.

Remove the foil and sprinkle the remaining cheddar cheese evenly over the top of the casserole. Return to the oven and bake uncovered for an additional 10 minutes, or until the top is golden and bubbly.

Step 11

Remove the casserole from the oven and let it rest for 10 minutes before serving. Sprinkle with freshly chopped parsley for garnish and enjoy.
