Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 cup Shredded sharp cheddar cheese
  • 2 stalks Celery

  • 0.25 cup Sour cream
  • 2 teaspoons Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly sized 1-inch chunks.

Step 2

Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water.

Bring the water to a boil over high heat, then reduce to medium heat and simmer until the potatoes are fork-tender, about 15-20 minutes.
