  • 6 medium Russet potatoes
  • 3 large Yellow onions
  • 4 tablespoons Butter

  • 1.5 cups Heavy cream
  • 1.5 cups Shredded cheddar cheese
  • 2 teaspoons Fresh thyme
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups Breadcrumbs
  • 0.25 cups Parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or oil.

Step 2

Peel the potatoes and slice them thinly, about 1/8-inch thick. Use a mandoline slicer for uniform slices, if possible.

Step 3

Slice the onions thinly into rings.

Step 4

In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the sliced onions, a pinch of salt, and cook, stirring occasionally, until the onions turn golden brown and caramelized, about 25-30 minutes. Set aside.
