Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or non-stick spray.
Peel and slice the russet potatoes into thin, even rounds, about 1/8-inch thick. Set them aside in a bowl of cold water to prevent browning.
In a medium saucepan over medium heat, melt 4 tablespoons of butter. Once melted, whisk in the flour and cook for about 1 minute to make a roux.
Gradually whisk in the whole milk, ensuring no lumps form. Continue cooking and stirring until the sauce thickens, about 5 minutes.

In a small bowl, mix the breadcrumbs with olive oil or melted butter until evenly coated. Sprinkle the breadcrumbs over the top of the casserole, covering the cheese sauce completely.
Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.
Remove the foil and bake uncovered for an additional 20 minutes, or until the potatoes are tender and the topping is golden and crispy.
Let the casserole rest for 10 minutes before serving. Garnish with fresh parsley, if desired. Serve warm and enjoy!
