Ingredients

  • 1 ball (enough for a 12-inch pizza) Pizza dough
  • 2 medium (thinly sliced) Yukon Gold potatoes
  • 3 tablespoons Olive oil
  • 1 large (sliced thinly) Yellow onion
  • 1 tablespoon (chopped) Fresh rosemary
  • 1 clove (minced) Garlic
  • 1 cup (shredded) Mozzarella cheese
  • 0.25 cup (grated) Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon (for dusting) Cornmeal or flour

Directions

Step 1

Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating to ensure it gets hot.

Step 2

Thinly slice the Yukon Gold potatoes using a mandoline or a sharp knife. Place the slices in a bowl of cold water to remove excess starch and prevent browning. Drain and pat dry with a clean towel before using.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring frequently, for about 10-12 minutes or until the onions are caramelized and golden brown. Remove from the heat and set aside.

Step 4

Roll out the pizza dough on a lightly floured surface to form a 12-inch circle. If using a pizza peel, dust it with cornmeal or flour to prevent the dough from sticking.

Step 5

Brush the rolled-out dough with 1 tablespoon of olive oil. Sprinkle the minced garlic evenly over the surface.

Step 6

Arrange the potato slices in an overlapping pattern across the dough, leaving a 1-inch border around the edges. Spread the caramelized onions over the potatoes.

Step 7

Sprinkle the chopped rosemary over the top, followed by the shredded mozzarella cheese and grated Parmesan cheese.

Step 8

Season the pizza with salt and black pepper, then drizzle the remaining 1 tablespoon of olive oil over the toppings.

Step 9

Carefully transfer the pizza to the hot pizza stone or onto a baking sheet. Bake for 12-15 minutes or until the crust is golden brown and the cheese is bubbly and slightly browned.

Step 10

Remove the pizza from the oven and let it rest for 2-3 minutes before slicing. Serve warm and enjoy!
