  • 2 tablespoons Olive oil

  • 4 medium Russet potatoes
  • 2 cups Heavy cream
  • 2 minced Garlic cloves
  • 6 ounces Goat cheese
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 cup Parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or nonstick cooking spray.

Step 2

Peel and thinly slice the onions. Heat a skillet over medium heat, add olive oil and butter, and sauté the onions for 20-25 minutes, stirring occasionally, until they are soft and golden brown. Remove from heat and set aside.

While the onions caramelize, peel the potatoes and slice them into thin rounds (about 1/8 inch thick) using a sharp knife or a mandoline slicer.
