Ingredients

  • 1 piece Russet potato (small to medium, peeled and cubed)
  • 6 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 0.5 cup Peanut butter (creamy preferred)

Directions

Step 1

Boil the peeled and cubed russet potato in a small pot of water over medium heat until fork-tender, about 10 minutes. Drain the water and mash the potato until smooth, ensuring no lumps remain. You will only need about 1/4 cup of mashed potato for this recipe. Let the mashed potato cool to room temperature.

Step 2

In a large mixing bowl, combine 1/4 cup of cooled mashed potato and the vanilla extract. Gradually add the powdered sugar, one cup at a time, mixing after each addition. The mixture will start as a sticky paste and eventually form into a dough-like consistency. Stop adding powdered sugar once the dough is firm and no longer sticky.

Step 3

Dust a clean, flat surface with powdered sugar. Roll out the potato candy dough into a large rectangle about 1/4 inch thick.

Step 4

Spread the creamy peanut butter evenly over the surface of the rolled-out dough.

Step 5

Starting from one of the longer edges, roll the dough tightly into a log, similar to a jelly roll. Use light pressure to ensure the log holds its shape without squeezing out the filling.

Step 6

Wrap the potato candy log in plastic wrap and refrigerate for at least 1 hour, or until firm enough to slice.

Step 7

Once chilled, unwrap the log and slice it into 1/4-inch thick pinwheel-shaped pieces. Serve immediately or store in an airtight container in the refrigerator for up to one week.
