Ingredients

  • 4 medium Potatoes
  • 3 cups Broccoli florets
  • 3 tablespoons Olive oil

  • 2 cloves Garlic cloves
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Water or vegetable broth
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Wash the potatoes thoroughly and cut them into small cubes, about 1/2 inch in size. Set them aside.

Step 2

Rinse the broccoli florets and pat them dry. Set aside.

Step 3

Peel and dice the yellow onion into small pieces. Finely mince the garlic cloves.

Step 4

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the diced potatoes to the skillet and spread them out in an even layer. Cook for about 5-7 minutes, stirring occasionally, until they begin to turn golden and crisp on the edges.
