Ingredients

  • 6 medium Russet potatoes
  • 3 tablespoons All-purpose flour
  • 2 large Eggs
  • 0.25 teaspoons Nutmeg
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 1 small Onion
  • 4 tablespoons Vegetable oil
  • 1 cup Sour cream
  • 2 tablespoons Chives

Directions

Step 1

Peel and wash the potatoes, then grate them finely using the smallest holes on a box grater. Place the grated potatoes in a clean kitchen towel and wring out as much liquid as possible.

Step 2

Peel and finely grate the onion. Combine the grated onion with the grated potatoes in a large mixing bowl.

Step 3

Add the flour, eggs, nutmeg, salt, and ground black pepper to the bowl, and mix well to form a thick batter.

Step 4

Heat 2 tablespoons of vegetable oil in a large nonstick frying pan over medium heat. Once hot, drop a tablespoon of the batter into the pan and flatten slightly to create a pancake about 2-3 inches in diameter. Repeat to fill the pan, leaving enough space between the pancakes.

Step 5

Cook the blinis for 2-3 minutes on each side, or until golden brown and crispy around the edges. Remove them from the pan and place them on a paper towel-lined plate to drain excess oil.

Repeat with the remaining potato batter, adding more vegetable oil to the pan as needed.
