Ingredients

  • 500 grams Potatoes
  • 200 grams All-purpose flour
  • 1 teaspoon Salt
  • 2 tablespoons Butter
  • 60 milliliters Milk
  • 1 teaspoon Baking powder
  • 2 tablespoons Vegetable oil or butter (for cooking)

Directions

Step 1

Peel the potatoes and chop them into even-sized chunks. Place them in a large pot of salted water and boil until tender, about 10-12 minutes.

Step 2

Drain the potatoes thoroughly and mash them until smooth. Allow the mashed potatoes to cool slightly.

Step 3

In a large mixing bowl, combine the mashed potatoes, flour, salt, baking powder, and butter. Mix until the butter is incorporated and the mixture forms a soft, slightly sticky dough.

Step 4

Gradually add milk, a little at a time, mixing with your hands or a spoon until the dough comes together. You may not need all of the milk, so add it slowly.

Step 5

Lightly flour a clean surface and turn the dough out onto it. Gently knead the dough for 1-2 minutes until smooth and pliable.

Step 6

Divide the dough into 4 equal portions. Flatten each portion into a round disk, about 1 cm (1/2 inch) thick.

Step 7

Heat a large skillet or griddle over medium heat and add the vegetable oil or butter for cooking.

Step 8

Cook each bannock in the skillet for 3-4 minutes on each side, or until golden brown and cooked through. Adjust the heat as necessary to prevent burning.

Step 9

Once cooked, transfer the potato bannocks to a plate and cover with a clean kitchen towel to keep them warm.

Step 10

Serve warm with butter, jam, or alongside soups and stews.
