Ingredients

  • 4 medium Potatoes (Yukon Gold or Russet)
  • 6 slices Turkey bacon
  • 1 large Yellow onion
  • 3 cloves Garlic cloves
  • 4 cups Low-sodium chicken broth
  • 1 cup Fat-free half-and-half
  • 1 as needed Olive oil spray
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 2 stalks Green onions (optional, for garnish)

Directions

Step 1

Peel and dice the potatoes into small cubes and set aside.

Step 2

Slice the turkey bacon into small strips. Spray a large pot with olive oil spray and place it over medium heat. Add the turkey bacon and cook until crispy, about 5-6 minutes. Remove the bacon and set it aside on a paper towel-lined plate.

Step 3

Finely chop the yellow onion and mince the garlic cloves. In the same pot used for the bacon, add the onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 1 minute, stirring frequently.

Step 4

Add the diced potatoes, chicken broth, salt, black pepper, and dried thyme to the pot. Stir well and bring to a boil over medium-high heat.

Step 5

Once boiling, reduce the heat to low and cover the pot. Let simmer for 20 minutes, or until the potatoes are tender and easily pierced with a fork.

Using an immersion blender, carefully blend the soup directly in the pot until smooth. If you do not have an immersion blender, you can transfer the soup in batches to a regular blender and blend until smooth, then return it to the pot.

Step 7

Stir in the fat-free half-and-half and adjust the seasoning with additional salt and pepper, if needed.

Serve the soup in bowls topped with the crispy turkey bacon and sliced green onions for garnish, if desired.
