Peel the potatoes and chop them into chunks. Place them in a large pot, cover with water, and boil until tender, about 10-12 minutes.
While the potatoes cook, cook the bacon in a skillet over medium heat until crispy. Transfer the bacon to a plate lined with paper towels to drain. Once cooled, crumble the bacon into small pieces.
Drain the sauerkraut well, squeezing out excess liquid with your hands or a clean kitchen towel. Set aside.
