Ingredients

  • 4 medium Russet potatoes
  • 6 slices Bacon
  • 1 small Yellow onion
  • 1 cup Shredded cheddar cheese
  • 1 cup All-purpose flour
  • 2 large Eggs
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Chopped parsley
  • 4 tablespoons Vegetable oil

Directions

Step 1

Peel the potatoes and cut them into chunks. Boil in a large pot of salted water until fork-tender, about 15-20 minutes.

Step 2

While the potatoes are boiling, cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate and crumble once cool.

Step 3

In the same skillet, sauté the finely diced onion in the bacon drippings until softened and translucent, about 5 minutes. Set aside.

Step 4

Drain the cooked potatoes and mash them in a large bowl until smooth. Allow the potatoes to cool slightly for easier handling.

Add the crumbled bacon, sautéed onions, shredded cheddar cheese, flour, eggs, garlic powder, salt, black pepper, and chopped parsley to the mashed potatoes. Mix until fully combined.
