While the potatoes cool, rinse the arugula or spinach and roughly chop it. Heat the olive oil in a skillet over medium heat, add the minced garlic, and sauté for 30 seconds until fragrant. Add the greens and cook for 2-3 minutes until wilted. Remove from heat and allow to cool.
