Ingredients

  • 500 grams Potatoes
  • 150 grams All-purpose flour
  • 50 grams Semolina
  • 1 piece Egg yolk
  • 0.5 teaspoon Salt
  • 8 pieces Fresh apricots
  • 8 teaspoons Granulated sugar
  • 50 grams Butter
  • 100 grams Breadcrumbs
  • 0.5 teaspoon Cinnamon (optional)
  • 2 tablespoons Powdered sugar
  • 2 liters Water

Directions

Step 1

Peel and boil the potatoes in salted water until tender, about 15-20 minutes.

Step 2

Drain the potatoes and let them cool slightly, then mash them until smooth and let them cool completely.

Step 3

In a mixing bowl, combine the mashed potatoes, flour, semolina, egg yolk, and salt. Mix until a soft dough forms, but avoid overworking it.

Step 4

Wash and cut the apricots in half, removing the pits. Place 1 teaspoon of granulated sugar inside the cavity of each apricot half.

Step 5

Divide the dough into 8 equal portions. Flatten each portion into a small disc, place a sugared apricot half in the center, and wrap the dough around it, sealing it completely to form a dumpling.
