Ingredients

  • 3 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter

  • 2 large garlic cloves
  • 1 large granny smith apple
  • 1.5 cups cooked ham
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 cups parmesan cheese
  • 1 tablespoon fresh parsley (optional for garnish)

Directions

Step 1

Peel the potatoes and cut them into 1/2-inch cubes. Dice the onion, mince the garlic, and core and dice the apple into 1/2-inch pieces. Dice the ham if not already diced.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the potato cubes and cook for 10-12 minutes, turning occasionally, until they are golden brown and crisp. Remove the potatoes from the skillet and set aside.

Step 3

In the same skillet, melt the butter. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
