  • 1 tablespoon lemon juice
  • 0.5 cup, for garnish watercress leaves
  • 4 slices, for serving (optional) crusty bread

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 3-4 minutes, or until softened and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the diced potatoes and stir to coat them in the onion and garlic mixture.

Pour in the vegetable stock, then bring the mixture to a boil.
