Ingredients

  • 4 medium Potatoes
  • 1 cup Frozen peas
  • 1 medium Onion
  • 3 Garlic cloves
  • 1 inch piece Ginger
  • 2 large Tomatoes
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Red chili powder
  • 2 tablespoons Vegetable oil
  • 1.5 cups Water
  • 2 tablespoons Fresh cilantro
  • 1 teaspoon Salt

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Set them aside.

Step 2

Finely chop the onion, mince the garlic, and grate the ginger. Dice the tomatoes into small pieces.

Step 3

Heat the vegetable oil in a large skillet or pot over medium heat.

Step 4

Add the cumin seeds and let them sizzle for about 30 seconds until fragrant.

Step 5

Add the chopped onion and sauté for 5-7 minutes until golden brown.

Step 6

Stir in the garlic and ginger, cooking for 1-2 minutes until aromatic.

Step 7

Add the diced tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook for 5-6 minutes, stirring occasionally, until the tomatoes break down and the spices are well incorporated.

Step 8

Add the potatoes to the pan and mix well to coat them in the spiced tomato mixture.

Step 9

Pour in the water, stir, and cover the pan with a lid. Reduce the heat to low and let the potatoes cook for 15-20 minutes, stirring occasionally, until they are tender.

Step 10

Add the peas to the curry and cook for another 5-7 minutes until heated through.

Step 11

Sprinkle the garam masala over the curry and stir to combine.

Step 12

Taste and adjust seasoning, adding more salt if needed.

Step 13

Garnish the curry with freshly chopped cilantro.

Step 14
