Ingredients

  • 1 medium Russet potato
  • 0.5 medium Yellow onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Unsalted butter
  • 1 large Egg
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Garlic powder
  • 1 teaspoon Parsley (optional, for garnish)

Directions

Step 1

Peel and dice the potato into small, evenly sized cubes (approximately 1/4-inch).

Step 2

Finely chop half of the yellow onion.

Step 3

Heat 1 tablespoon of olive oil in a medium non-stick skillet over medium heat.

Step 4

Add the diced potato to the skillet and season with 1/4 teaspoon of salt, 1/8 teaspoon of black pepper, and 1/8 teaspoon of garlic powder. Stir to coat the potatoes.

Step 5

Cover the skillet with a lid and allow the potatoes to cook for 8-10 minutes, stirring occasionally, until they begin to soften.

Step 6

Add the chopped onion to the skillet along with the remaining 1 tablespoon of olive oil. Cook uncovered for an additional 8 minutes, stirring occasionally, until the potatoes are golden brown and crispy and the onions are caramelized.

Step 7

Meanwhile, heat 1 teaspoon of butter in a separate small non-stick skillet over medium-low heat.

Step 8

Crack the egg into the skillet and cook until the whites are set and the yolk reaches your desired level of doneness, about 3-4 minutes for sunny-side-up or longer if you prefer the yolk cooked through.

Step 9

Transfer the potato and onion hash to a plate.

Step 10

Carefully place the fried egg on top of the hash.

Step 11

Sprinkle with additional salt, pepper, and parsley (if using) to taste.

Step 12

Serve immediately and enjoy!
