Ingredients

  • 200 grams Macaroni
  • 500 grams Potatoes
  • 60 grams Butter
  • 40 grams All-purpose flour
  • 500 milliliters Milk
  • 200 grams Cheddar cheese
  • 50 grams Parmesan cheese
  • 60 grams Breadcrumbs
  • 2 cloves Garlic (minced)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Nutmeg (optional)
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 200°C (390°F). Grease a baking dish with a little butter or oil and set aside.

Step 2

Peel and slice the potatoes into thin, even rounds (about 3-4 mm thick). Set them aside in a bowl of water to prevent browning.

Step 3

Bring a pot of salted water to a boil. Add the macaroni and cook until al dente according to the package instructions. Drain and set aside.

In a medium saucepan, melt 40g of butter over medium heat. Add the all-purpose flour and whisk continuously for 1-2 minutes to make a roux.

Gradually pour in the milk while whisking to form a smooth sauce. Cook the sauce for 3-4 minutes, stirring often, until it thickens slightly.

Add the grated cheddar cheese to the sauce and stir until melted and smooth. Season with salt, black pepper, and nutmeg (if using). Remove from heat.
