Ingredients

  • 4 medium Russet potatoes
  • 1 large Yellow onion
  • 3 medium Garlic cloves
  • 2 tablespoons Olive oil
  • 4 cups Vegetable or chicken stock
  • 1 cup Heavy cream
  • 1 sprig Fresh rosemary
  • 2 sprigs Fresh thyme
  • 2 tablespoons Fresh parsley
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter
  • 1 teaspoon Lemon juice

Directions

Step 1

Peel the potatoes and cut them into 1-inch cubes. Dice the onion and mince the garlic cloves.

Step 2

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes, until translucent.

Step 3

Add the minced garlic and cook for 1-2 minutes, stirring constantly to prevent burning.

Step 4

Add the cubed potatoes, vegetable or chicken stock, rosemary, and thyme sprigs to the pot. Bring to a boil, then reduce the heat to a simmer. Cover the pot and cook for 15-20 minutes, or until the potatoes are very tender.

Step 5

Remove the rosemary and thyme sprigs from the pot, then carefully blend the soup using an immersion blender until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until creamy.

Step 6

Return the blended soup to the pot and stir in the heavy cream, butter, chopped parsley, salt, pepper, and lemon juice. Adjust seasoning to taste.

Allow the bisque to warm through over low heat for 3-5 minutes, stirring occasionally.
