Ingredients

  • 4 large Eggs
  • 2 medium Potatoes
  • 1 cup (shredded) Cheddar cheese
  • 2 tablespoons Milk
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon (chopped, optional) Parsley

Directions

Step 1

Peel the potatoes and dice them into small 1/2-inch cubes.

Step 2

Bring a small pot of salted water to a boil, add the diced potatoes, and cook for 5-6 minutes, or until just tender. Drain and set aside.

Step 3

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Set aside.

Step 4

Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Add the cooked potatoes and sauté for 3-4 minutes or until they are golden and slightly crispy.

Step 5

Transfer the potatoes to a plate and clean the skillet with a paper towel.

Step 6

Add the remaining tablespoon of butter to the skillet and heat over medium-low heat.

Step 7

Pour the egg mixture into the skillet, allowing it to spread evenly. Cook for about 1-2 minutes or until the edges start to set.

Step 8

Evenly sprinkle the sautéed potatoes and shredded cheddar cheese over one half of the omelette.

Step 9

Using a spatula, carefully fold the omelette in half to cover the filling. Press gently to ensure the cheese melts.

Step 10

Cook for an additional 2-3 minutes over low heat, or until the omelette is fully set and the cheese is melted.

Step 11

Slide the omelette onto a plate, garnish with chopped parsley (if desired), and serve immediately.
