Ingredients

  • 2 cups small potatoes
  • 1 cup carrots
  • 0.5 medium red onion

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lime juice
  • 0.25 cup fresh cilantro
  • 0.5 whole jalapeño (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and peel the potatoes and carrots. Cut them into small, bite-sized cubes.

Spread the diced potatoes and carrots onto a baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with the ground cumin, smoked paprika, half of the salt, and black pepper. Toss to coat.
