  • 4 large Russet potatoes
  • 6 slices Bacon
  • 1 cup Cheddar cheese (shredded)
  • 3 stalks Green onions (chopped)
  • 0.5 cup All-purpose flour
  • 1 large Egg
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

Peel the potatoes and cut them into chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-18 minutes, or until tender when pierced with a fork.

Step 2

While the potatoes cook, fry the bacon slices in a skillet over medium heat until crispy. Remove the bacon, let it cool, then crumble it into small pieces. Reserve about 1 tablespoon of the bacon grease.

Drain the potatoes and return them to the pot. Mash the potatoes well until smooth and let them cool slightly.
