Ingredients

  • 2 large Russet potatoes
  • 2 medium Apples
  • 2 large Eggs
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Ground cinnamon
  • 0.25 cup Vegetable oil
  • 0 optional Sour cream or applesauce (for serving)

Directions

Step 1

Peel the russet potatoes and apples and grate them using the large holes of a box grater.

Step 2

Place the grated potatoes and apples in a clean kitchen towel and squeeze out as much liquid as possible. Discard the liquid.

Step 3

In a large mixing bowl, combine the grated potatoes and apples. Add the eggs, flour, salt, black pepper, and cinnamon. Mix well until fully combined.

Step 4

Heat a large skillet or frying pan over medium heat and add 2-3 tablespoons of vegetable oil.

Step 5

Scoop about 2 tablespoons of the potato and apple mixture onto the skillet and flatten it gently with the back of a spoon to form a pancake. Repeat until the skillet is full but not overcrowded.

Step 6

Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.

Step 7

Transfer the cooked pancakes to a paper towel-lined plate to drain excess oil. Repeat the cooking process with the remaining mixture, adding more oil to the skillet as needed.

Step 8

Serve the pancakes warm with a dollop of sour cream or a side of applesauce, if desired.
