Ingredients

  • 3 cups leeks (white and light green parts only, cleaned and sliced)
  • 3 cups russet potatoes (peeled and diced)
  • 6 cups water
  • 1 teaspoon kosher salt
  • 0.5 cups heavy cream or crème fraîche
  • 1 tablespoon unsalted butter (optional for garnish)
  • 2 tablespoons fresh chives (chopped, optional for garnish)
  • 0.25 teaspoon freshly ground black pepper (optional for garnish)

Directions

Step 1

Prepare the leeks by trimming off the dark green tops and roots. Slice the white and light green parts lengthwise, rinse thoroughly under running water to remove grit, and then slice thinly crosswise.

Step 2

In a large, heavy-bottomed pot, combine the leeks, diced potatoes, water, and salt. Bring to a gentle boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low and simmer the soup uncovered for about 30 to 40 minutes, or until the potatoes and leeks are very tender.

Step 4

Remove the pot from the heat. Use an immersion blender to puree the soup directly in the pot until smooth, or transfer the mixture in batches to a stand blender to puree. (Alternatively, leave the soup chunky for a rustic texture.)

Step 5

Stir in the heavy cream or crème fraîche to add richness. Adjust seasoning with more salt if needed.

Step 6

Ladle the soup into bowls and garnish with optional toppings such as a pat of butter, chopped chives, and freshly ground black pepper.

Step 7

Serve warm with crusty bread or a side salad for a comforting and elegant meal.
