Ingredients

  • 4 medium Russet potatoes
  • 1 teaspoon Salt
  • 2 tablespoons Unsalted butter
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Paprika
  • 0.5 cup Shredded cheddar cheese
  • 2 stalks Scallions
  • 1 large Egg
  • 0.5 cup All-purpose flour
  • 3 tablespoons Vegetable oil

Directions

Step 1

Peel and chop the russet potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook for 12-15 minutes or until fork-tender.

Step 2

Drain the potatoes and return them to the pot. Mash them with a potato masher until smooth. Stir in the butter, salt, black pepper, garlic powder, and paprika.

Step 3

Allow the mashed potatoes to cool slightly, then mix in the shredded cheddar cheese, finely chopped scallions, and a beaten egg. Stir until well combined.

Step 4

Gradually mix in the all-purpose flour until the mixture is cohesive and can be shaped into patties.

Step 5

Form the potato mixture into round patties, approximately 3 inches in diameter and ½ inch thick.

Step 6

Heat the vegetable oil in a large skillet over medium heat. Once hot, add the patties in batches, ensuring not to overcrowd the pan.

Step 7

Cook for 3-4 minutes on each side, or until golden brown and crisp. Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.

Step 8

Repeat with the remaining potato mixture, adding more oil to the skillet if necessary.

Step 9

Serve warm, garnished with extra scallions or a dollop of sour cream, if desired. Enjoy your Potaddies!
