Ingredients

  • 4 medium Russet potatoes
  • 1 teaspoon Salt
  • 1 pound Ground beef
  • 1 packet Taco seasoning mix
  • 0.25 cup Water
  • 0.5 cup Mayonnaise
  • 0.5 cup Sour cream
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Chili powder
  • 2 cups Romaine lettuce
  • 1 cup Cherry tomatoes
  • 0.5 cup Shredded cheddar cheese
  • 1 cup Tortilla chips
  • 0.25 cup Sliced black olives
  • 2 stalks Green onions
  • 0.25 cup Cilantro

Directions

Step 1

Peel and dice the Russet potatoes into bite-sized cubes. Place them in a large pot with cold water and add 1 teaspoon of salt. Bring to a boil and cook until tender, about 10-12 minutes.

Drain the potatoes and let them cool completely while preparing the rest of the dish.

In a medium skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up into small pieces. Drain any excess grease.
