Ingredients

  • 3 lbs Chuck roast
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 large Yellow onion, sliced
  • 4 Carrots, peeled and cut into chunks
  • 3 Celery stalks, chopped
  • 4 Garlic cloves, minced
  • 2 cups Beef broth
  • 2 tbsp Tomato paste
  • 4 Fresh thyme sprigs
  • 2 Bay leaves
  • 0.25 cup Bourbon
  • 0.25 cup Maple syrup
  • 2 tbsp Unsalted butter

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Season the chuck roast evenly with 2 tsp of salt and 1 tsp of black pepper.

Step 3

Heat 2 tbsp of olive oil in a large Dutch oven or oven-safe pot over medium-high heat.

Step 4

Sear the chuck roast on all sides until browned, about 3-4 minutes per side. Remove the roast and set it aside.

In the same pot, add the sliced onion, carrots, celery, and garlic. Sauté for 5-7 minutes until the vegetables begin to soften.

Stir in the tomato paste and cook for 1 minute to enhance the flavor.
