  • 4 Garlic cloves, minced
  • 4 medium Carrots, cut into 2-inch pieces
  • 1.5 pounds Baby red potatoes, halved
  • 2 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Hot sauce
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Cayenne pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef chuck roast on all sides with kosher salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat. Sear the roast for 3-4 minutes per side until browned. Remove the roast and set it aside.
