  • 3 pounds Chuck roast (boneless)
  • 2 teaspoons Salt
  • 1.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 Yellow onion (large, sliced into thick wedges)
  • 4 Carrots (peeled and cut into 2-inch pieces)
  • 3 Celery stalks (cut into 2-inch pieces)
  • 4 Garlic cloves (minced)
  • 2 cups Beef broth
  • 1 cup Red wine (optional)
  • 2 tablespoons Tomato paste
  • 5 Fresh thyme sprigs
  • 2 Fresh rosemary sprigs
  • 2 Bay leaves
  • 3 Russet potatoes (peeled and quartered)

Directions

Step 1

Season the chuck roast generously with salt and black pepper on all sides.

Step 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 3

Add the roast to the pot and sear for 3-4 minutes on each side, or until a deep golden crust forms. Remove the roast from the pot and set aside.

In the same pot, reduce the heat to medium and add the onion wedges. Sauté for 2-3 minutes until lightly caramelized.

Add the carrots and celery, cooking for another 4-5 minutes while stirring occasionally.
