Ingredients

  • 2 tablespoons Olive oil
  • 3 cloves (minced) Garlic
  • 1 medium (diced) Yellow onion
  • 200 grams (crumbled) Cooked Italian sausage
  • 100 grams Sliced pepperoni
  • 1 cup Diced bell peppers (red and green)
  • 1 cup Sliced mushrooms
  • 400 grams (1 can) Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 tablespoon Italian seasoning
  • 0.5 teaspoon Red pepper flakes
  • 1 teaspoon (adjust to taste) Salt
  • 0.5 teaspoon Black pepper
  • 300 grams Uncooked pasta (fusilli, penne, or rigatoni)
  • 4 cups Chicken or vegetable broth
  • 2 cups Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 6 leaves (optional, for garnish) Fresh basil leaves

Directions

Step 1

Heat a large, deep pot or Dutch oven over medium heat. Add the olive oil, followed by the minced garlic and diced onion. Sauté for 2-3 minutes until fragrant and the onion becomes translucent.

Step 2

Add the cooked Italian sausage and sliced pepperoni to the pot. Stir occasionally for 3-4 minutes to lightly brown the sausage and release the flavors from the pepperoni.

Step 3

Add the diced bell peppers and sliced mushrooms to the pot. Cook for another 3 minutes, allowing the vegetables to soften slightly.

Step 4

Stir in the crushed tomatoes, tomato paste, Italian seasoning, red pepper flakes, salt, and black pepper. Mix thoroughly and let the mixture simmer for 2 minutes to combine the flavors.

Step 5

Add the uncooked pasta to the pot, followed by the broth. Stir to ensure the pasta is evenly distributed and submerged in the liquid.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to medium-low. Cover the pot with a lid and let it simmer for 12-15 minutes, stirring occasionally to prevent sticking, until the pasta is cooked to al dente and most of the liquid is absorbed.

Step 7

Once the pasta is cooked, turn off the heat and mix in 1 cup of shredded mozzarella cheese and half of the grated Parmesan cheese. Stir until the cheeses are melted and evenly distributed.

Step 8

Sprinkle the remaining mozzarella and Parmesan cheese over the top. Cover the pot for 2-3 minutes to allow the cheese to melt and create a gooey topping.

Step 9

Optional: Garnish with fresh basil leaves before serving for an added touch of flavor and presentation.

Step 10

Serve the Pot of Pizza immediately while warm. Enjoy your hearty, one-pot dinner!
