  • 750 milliliters chicken broth
  • 400 grams canned diced tomatoes
  • 150 grams uncooked basmati rice
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 1 lemon wedge

Directions

Step 1

Dice the chicken thighs into bite-sized pieces and set aside.

Step 2

Peel and finely chop the onion and garlic. Dice the carrots, celery, and red bell pepper into small cubes.

Step 3

Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until lightly browned on all sides. Remove the chicken and set aside.
