Ingredients

  • 2 cups Post S Bran Cereal
  • 1 cup Boiling Water
  • 1.5 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Cinnamon
  • 0.5 cup Unsalted Butter
  • 0.5 cup Honey
  • 0.25 cup Brown Sugar
  • 2 pieces Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup Milk
  • 0.5 cup Raisins or Dried Fruit (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line it with paper liners.

Step 2

In a large bowl, combine the Post S Bran Cereal and boiling water. Stir to moisten the cereal and let it sit for 5-7 minutes until softened.

Step 3

In a separate medium-sized bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon. Set this dry mixture aside.

Step 4

In the softened cereal mixture, add the melted butter, honey, and brown sugar. Mix until well combined.

Step 5

Beat in the eggs one at a time, followed by the vanilla extract.

Step 6

Gradually alternate adding the dry flour mixture and milk to the wet batter, starting and ending with the flour. Mix gently to combine. Do not overmix.

If you’re adding raisins or dried fruit, fold them in at this point.
