  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil

  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese, grated
  • 2 teaspoons cajun seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 12 ounces fettuccine or linguine
  • 2 tablespoons flat-leaf parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine or linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Season both sides of the chicken breasts with 1 teaspoon of cajun seasoning, paprika, salt, and black pepper.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F).
