Bring a large pot of salted water to a boil. Cook the fettuccine or linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.
Season both sides of the chicken breasts with 1 teaspoon of cajun seasoning, paprika, salt, and black pepper.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside to rest, then slice into thin strips.
Add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter to the same skillet used for the chicken. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.
Add the minced garlic and cook for 1 minute, until fragrant.
Pour in the chicken broth and scrape the bottom of the skillet to deglaze, loosening any browned bits. Allow the broth to reduce slightly, about 2 minutes.
Lower the heat to medium-low and stir in the heavy cream and remaining 1 teaspoon of cajun seasoning. Let the mixture simmer gently for 3-4 minutes, allowing the flavors to meld.
Stir in the grated parmesan cheese until it melts and the sauce becomes smooth and creamy. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
Toss the cooked pasta in the sauce until well-coated. Stir in the sliced chicken, and cook for 1-2 minutes to heat through.
Garnish with chopped parsley, if using, and serve hot.
