Ingredients

  • 4 pieces beef steaks (e.g., sirloin or rump steak)
  • 4 cloves garlic cloves, minced
  • 4 tablespoons olive oil
  • 0.5 cups white wine
  • 1 teaspoon paprika
  • 2 leaves bay leaves
  • 2 tablespoons butter
  • 4 pieces eggs
  • 4 medium-sized potatoes, peeled and cut into thin fries
  • 2 cups vegetable oil for frying
  • 1 to taste salt
  • 1 to taste black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the beef steaks on both sides with salt, pepper, and paprika. Rub the minced garlic into the steaks.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the steaks and sear for 2-3 minutes on each side until browned. Remove the steaks and set aside.

Step 3

In the same skillet, add the white wine and bay leaves. Deglaze the pan, scraping up any browned bits from the bottom. Reduce the heat to a simmer and let the wine reduce by half.

Step 4

Return the steaks to the skillet along with the butter. Cook for 2-3 minutes, basting the steaks with the sauce. Remove from heat and cover to keep warm.

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes per batch. Transfer to a paper towel-lined plate and season with salt.

In a separate skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Fry the eggs sunny-side-up until the whites are set but the yolks remain runny. Season with a pinch of salt and pepper.

To serve, place each steak on a plate with a fried egg on top. Add a generous serving of fried potatoes on the side.

Drizzle any remaining pan sauce over the steaks and garnish with chopped fresh parsley. Serve immediately.
